Delicious Christmas cookie recipe - My Swedish teacher a gave it to me a few years ago. I like to use finely chopped almonds and almond (or lemon) extract instead of vanilla.
Swedish Crisps
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup shortening
1/2 cup butter
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup chopped walnuts
1/3 cup granulated sugar for decoration
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together the shortening, sugars, and butter until smooth.
- Stir in the egg and vanilla extract.
- Sift together the flour, baking soda, and cream of tartar. Stir into the sugar mixture.
- Roll dough into walnut sized balls. Roll the balls in chopped nuts then in sugar.
- Place on an ungreased cookie sheet and bake for 12 to 15 minutes or until cookies are light brown.
